Split Pea Soup

Ingredients

1 cup of split peas

6 cups of water

2 Tbsp olive oil

2 tsp sea salt

1/2 Tbsp cumin seeds

1 tsp crushed fresh garlic

1/2 cup chopped white onions

Optional:
-
1/3 cup chopped cilantro

1/4 cup of pomegranate seeds
Direction
1. Add the split peas to a pot with about 6 cups of water, add a tsp of salt and bring to a boil for about 40 mins or until peas is soft.
2. Remove from heat. Get a potato masher and mash the split peas. Add more water if you want a thinner consistency.
3. In a separate pot add onions & olive oil, cook for 2-3 minutes. Add cumin seeds, crushed garlic, curry powder and stir for about 30 seconds. Add split pea and stir, keeping pot on low medium heat. Add in about 1 tsp sea salt to taste. Cook for additional 5-10 minutes. Let soup sit covered for 5 minutes then serve hot.
Optional: Top with fresh pomegranate seeds, cilantro, diced cucumbers or served over rice.
