¼ tsp fresh ginger grated

1 cup of low-sodium vegetable broth

1 cup pumpkin puree

¼ tsp nutmeg
Direction
1. Add the pumpkin, vegetable stock, coconut milk, maple syrup and spices into a medium size sauce pan and cook for 20 minutes over low.
2. Remove from heat. Blend until smooth in a large blender.
3. Then serve and enjoy the meal.
